Easy Valentine’s Day Shortbread Treats

Hi guys!

Valentine’s Day is right around the corner and I received an absolutely delicious package from my friends at Walkers Shortbread. Let me tell you, it was SO difficult not to open every.single.box upon arrival. They sent me some products from their new chocolate line and to be honest, who needs a box of chocolates when you can have a box of chocolate SHORTBREAD?

Here’s the rundown of my goodie box:

Chocolate & Raspberry Shortbread: A new combination of scrumptious raspberry shortbread, half coated with rich dark chocolate.
Chocolate & Toffee Shortbread: The perfect blend of Walkers Shortbread and delicious toffee pieces half coated in smooth milk chocolate makes for a mouth-watering combination.
Ginger Royals: A unique shortbread, combining the moistness of real stem ginger with the crispness of Walkers traditional pure butter shortbread, plus the irresistible taste of dark chocolate.
Orange Royals: Crisp pure butter shortbread baked with Mediterranean oranges and smothered in rich smooth milk chocolate.
Walkers Gluten Free Chocolate Chip Shortbread: A generous helping of chocolate chips provides a rich and luxurious complement to this classic shortbread cookie. By replacing the wheat with a blend of rice flour, maize flour and potato starch, you get all the pure-butter delicious taste – without the gluten!
Walkers Shortbread Chocolate Scottie Dogs:  Made with chocolate dough and added chocolate chips, this chocoholic version of our ever-popular Scottie Dogs Shortbread is made with only the finest ingredients.
Walkers Chocolate Chip Shortbread: The timeless delight of Walkers’ traditional Scottish shortbread with added luscious chunks of smooth dark chocolate chunks. Chocolate Chip Shortbread brings a certain self-indulgence to give you a real treat.

Don’t they all sound AMAZING? Our favorites so far, are the Chocolate Scottie Dogs and the Ginger Royals. Justin has been enjoying the cookies with his coffee and I think they are best served with a big, cold glass of milk. Charlee and I had a tea party as well!

I decided that I wanted to create some fun Valentine’s Day themed treats for our neighbors and for Charlee to help make some goodies for her dance class. Our sweet neighbor, Paula, surprised us with a new Valentine’s Day wind flag for our front porch, so we decided to surprise her with a box of Chocolate Chip Shortbread and a lovely card, handmade by Charlee. She was so tickled and Charlee was thrilled because Ms. Paula shared her cookies with her!

After we delivered the cookies to Ms. Paula, we got to work on the treats for Charlee’s dance class. I wanted to do something simple so that Charlee could get involved and assist with. First, we chose to dip Walkers Shortbread Fingers into red candy melts and added festive heart sprinkles.

Then, we moved onto the Shortbread Chocolate Scottie Dogs and added simple decorations. I added a bow collar using the same candy melts and heart sprinkles and Charlee had the idea to add a heart “cutie mark” (like My Little Pony). We love the way they turned out! Really easy but also really, really cute!

Thanks to Walkers Shortbread, we will hopefully put a smile on many faces and fill their tummies with these sweet treats. They were so simple and came together quickly, perfect for all of you who are short on time!
