You need this easy and delicious breakfast casserole in your life. I promise!
So when it comes to dinnertime, if you’re anything like me, some nights you stand in front of your pantry or refrigerator just hoping that something will jump out at you. I’ve been really trying to utilize a lot of my on-hand items that tend to get looked over – you all know what I’m talking about; the half filled bag of egg noodles, the random can of baby corn and the frozen veggies leftover from making a potpie a month ago.
Anyways, with that being said, tonight was one of those nights. Justin is out of town so it was just Charlee and I to fend for ourselves. Charlee said she wanted scrambled eggs, I saw a can of biscuits in the fridge and I knew we had a stockpile of cheese.
The easiest breakfast casserole ever was born!
You throw all of the ingredients in a bowl to mix and then pour them in a 13×9 dish to bake. So simple, very little cleanup and dinner (or breakfast) is ready in about 25 minutes! It’s also insanely versatile; feel free to add veggies, cheese or meat of your choice.
Fun fact: My dad loves breakfast food but refuses to eat breakfast for dinner. How about you?

- 6 eggs
- 1/2 cup milk
- 1 cup shredded cheddar
- 1 cup meat of choice (I used deli ham)
- 1 can biscuits, cut into quarters
- Salt & pepper to taste
- Preheat oven to 350.
- Whisk eggs in a large bowl and add remaining ingredients.
- Pour into a 13x9 baking dish and bake for 25 minutes or until golden brown.
