I know I’m a day late and dollar short for the whole Valentine’s Day thing but I just HAD to share this cookie recipe with you all! Instead of using Valentine’s Day colors, throw in whatever color matches your theme or holiday and you have yourself a whole ‘nother cookie!
So what started out as an attempt to make a couple cute Valentine’s Day gifts for our neighbors, turned into a cookie with the goodies mixed in. Baubles & Backdrops posted an adorable DIY valentine made using Teddy Grahams, M&M’s and mini marshmallows; I thought it would make super cute gifts! Well I purchased everything, put them together and never got around to delivering them – super fail. I didn’t want to deliver them late so I got to brainstorming.
I absolutely love s’mores and I thought the 3 ingredients mentioned above would make a killer cookie (I was right!). I searched for a chocolate chip cookie recipe (found the perfect one here!), mixed in the goodies and scooped out the little balls of love onto my baking sheet. 10 minutes later and my husband and I were eating delicious, warm cookies fresh out of the oven! These cookies are moist and delicious with an abundance of chocolate and toasted marshmallows.
The recipe made about 50 cookies using a 1″ cookie scoop so there were plenty to pass out to my neighbors. I am definitely using this recipe as my new go-to chocolate chip cookie and may experiment with new mix-ins! I invite you to give it a try.
